It's a wrap up 2012

WE have enjoyed 2012! I cannot begin to tell you about all of our blessings this year. Here is a quick run down of our year....

January we traveled to Cancun, Mexico we had a relaxing trip with our cutie.  Kaden is getting so big!

February we began prepping for Kaden's first birthday and took a getaway to our new favorite beach location- Crystal Cove.

March was a big celebration for our little boy. His first birthday was terrific. A candy themed party was a huge hit.

April we were chasing after a very active boy. He is walking all over the place. We also celebrated Easter!

May brought tons more fun as Kaden was growing into an active toddler. It is amazing the progress from one month to the next.

June we traveled to Walt Disney World and Puerto Vallarta. This little guy sure is a traveler. He is a trooper and does very well on the plane.

July Matt and I took a much needed trip by ourselves to Las Vegas. It was a peaceful 3 days and 2 nights.

August we had house guests- David and Sofia stayed with us. We enjoyed having them over!

September we enjoyed our 5 year anniversary with a getaway. Shopping, food, and relaxation!

Date night

Been out lately? I cannot stress enough the importance of weekly date nights! Since having Kaden date nights are a MUST. Tonight my hubby and I went out and saw a movie. K stayed with a babysitter that adores him and he enjoys playing with her. It is the holiday season and I probably have more than 10 things to do on my list but we put everything aside and had a fun evening just the two of us. Here are some date night ideas:
*Go to see a movie, concert, theatre, musical, or even orchestra performance.
*Go out to dinner, appetizers, dessert or simply coffee.
*Take a stroll through the park and chat. It is wonderful to have an adult conversation without interruptions.
*Get errands done- I know this sounds crazy but two people accomplishing the dry cleaning run, grocery shopping, meal planning, and the joyful trip to Costco, is easier when both go. It really is not a date but finish off the list with your favorite scoop of ice cream and I am sold! Give me rocky road ice cream and I will tackle the to do list.

Married couples with or without children I highly recommend date nights to keep you sane. As a couple having some time alone is essential to a marriage and now I totally understand why. God orchestrates marriage and it is our part to keep it healthy and strong. So when was your last date? Plan your next one! You will be thrilled at how much fun you will have and you will feel a little bit refreshed (away from the kiddie/kiddos will be refreshing).

Christmas is the Season

2012 holds a different Christmas for my family. This year my grandma passed away. She was a key person in our family and since Grandpa passed away over 5 years ago it was a tough holiday season then and it is very tough this year. My mom's family tries to get together around the holidays and it is usually for New Years. This year I am hosting my mom's family for a Christmas celebration. We love having people in our home. At first I was a little apprehensive because having a gathering more than 20 people worries me. God knows that this gathering will be a great time to enjoy each other. It will not be a sit down dinner which helps me. Each family will bring something which helps me greatly.

We will be having a FIESTA! In Mexico there is a week long party- for one week each night there is a "posada". I'm pretty sure it has something to do with Mary and Joseph making the trek to Bethlehem. I am going to share the Christmas story that day and serve plenty words of encouragement from God's word. Looking forward to our fun filled day!

Continue to Pray for America

After hearing about the most recent tragedy at an elementary school in Newton, Conn. it brought me to my knees. Precious lives were lost today and I cannot imagine what the parents, family, friends, classmates, teachers, and community must feel. This brought me back to reality, the fact that we do live in a sinful world and holding our loved ones closer tonight. I am thanking the Lord for watching over and protecting us in our comings and goings.  Here are a few thoughts:

The children: "Jesus loves the little children!" The adorable kiddies will never say I love you to their parents, they will never graduate from high school, and never have the opportunity to celebrate this Christmas season. Innocent children that never hurt another person intentionally. How many of those children are an only child? Losing your one and only is so tragic. How many of those children were born at a great cost? I personally know many friends that endured hardships to finally conceive and then give birth to their adorable baby. These parents are in anguish as well. Classmates are mourning the loss of their friends in their own way. Many will need psychology help to process the tragedy. Siblings will be without their brother or sister. I can picture those sweet faces looking at their teachers eager to learn! They were going to celebrate their last day of school before the holiday break. As they went to school this morning they anticipated their holiday party and being off for a couple of weeks. Their gifts will be under the tree this Christmas as the parents mourn the loss. Christmas morning will never be the same.....

The parents: Receiving an emergency phone call at work stating that there was a shooting at your children's school. Parents rushed- ran to the school, cried on the way, drove frantically to get there as soon as they could. I could not put myself in their shoes and relay everything they must have thought or did. Tonight parents hold your gifts from the Lord extra tight, that adorable little boy or girl. Thank the Lord for his blessings and his unfailing love. Share with your older children the events that occurred today in a modified version and age appropriate and omitting specific details. The media will detail everything and placing your children in front of the television to learn what happened is not the best way. Something to this effect- Son or daughter: We live in a world where tragic situations happen, children and adults lost their lives today. Not sure as to why this occurred but we do know that we love you so much and there are people that protect us and keep us safe. We do not know why things like this happen but there is no need to worry. We love you and will do everything to provide safety.
Children are bound to hear more graphic details from friends or classmates. The best advice is to tell them in advance that there may come across these conversations and to walk away and not listen. Unfortunately children can pick up bits and pieces of information and pass them onto others as truth. Teach your children that you as their parents will provide them truth and they can always come to you.

I cried today and I am sure I will continue to cry in the upcoming weeks. Pray! PRAY!!! I cannot stress the word pray. Our country and world is not getting better. Sin is growing and it is up to us to stand up in our faith and seek God's word. Be a light in this dark world! My prayers go out to all of the families, children, teachers, school workers, and community. I wish I could be there to hug each one of them and tell them that God loves them and only HE can get them through this. Let us all join in and wish everyone our deepest sympathy and love.

Packing Lite

I am so excited for my trip to San Francisco tomorrow! My sister graduated from college on Saturday so we are celebrating with a trip!! My birthday is tomorrow and what better way to ring in my 31st in a special way.

There are times I dread packing (mainly for trips that require warm clothing). I would much rather pack bathing suits and shorts than scarves, coats and boots. Nonetheless I have left my packing to the night before which leaves room for many items left behind. Thank goodness Southwest has free checked baggage! What are some must haves? On the top of my list is my coats, umbrella, and comfortable shoes (would rather take some cute heels). I never pack light so I will do a process of elimination, exactly what it entails I am not sure but I have to be done by tonight. My goal is done and ready by 9pm.

Get carded

The holiday season is in full swing and I am excited to receive our first Christmas
Card for the 2012 season. Last week I was thinking of purchasing a metal card holder to place on a wall. I came across one of the best ways to display cards. It will have to wait for a couple more weeks, I have some important things to do before I can re create this beauty. The search is over and I cannot wait to get my crafty skills out!

Looking Old

I was beyond shocked last week when I found not one but three long white hairs! As you can imagine I flipped out. Who has white hair at the young age of 30. I began to realize that my body has changed quite a bit in the last two years. Having a baby changed my body and sadly I think it was not the best for my body. I can't bounce back as quickly as I thought. My metabolism has slowed down greatly and I think I have to be on a diet for the rest of my life and workout daily to maintain a steady body weight. In less than a week I will turn 31 and to be honest I am not ready for that. Getting old is not for me!

Prep for Thanksgiving

This year I am not hosting Thanksgiving because my hubby has to work :( I am still bummed about it but slowly have to come to terms with it.

Anyways I enjoy writing out to do lists and the menu all for Thanksgiving dinner. My mom is making the turkey and her delicious mashed potatoes. That leaves me with salad, rolls, green beans, corn, and dessert. Since my dad was diagnosed with diabetes last month I have begun to search for a sugar free dessert that all of us will enjoy. Any great recipes?

I recently came across some new recipes for side dishes which are prefect for Thanksgiving. We love everything traditional which I truly enjoy. So here they are: stuffing (we usually don't eat stuffing but this year i want to make some), glazed carrots (they looked delicious on television), and green bean casserole (a must have at every table). This year Kaden will be enjoying a turkey dinner. I'm excited to see him eat. Last year he had yams (maybe I will make it again and top the yams off with the tutti frutti marshmallows). I will post pics of all of my creations. I am going to cook everything at my home then head over to my parents.

As you begin to write out your list for dinner and all of the cleaning you need to do, please do not forget the meaning. This is a time we can share all that we are thankful for and also share the blessings with others. Invite others to your home and you will have a very blessed time.

Day 3 of Thankfulness

I am very thankful for our precious little boy! God blessed us with him and saw us fit to be his parents. Kaden is such a sweetie and I am learning so much (being a parent can be hard at times). He is growing up to learn about God's word, loving others, and having a kind & gentle spirit. Even though he does not tell us that he loves us, he expresses it with giant hugs and sweet kisses. Love him so so much!!

Day 2 of Thankfulness

I very thankful for my wonderful husband. He means so much to me and here is my feeble attempt to get as much as I can in this blog.

He is my best friend, the one person that I run to with my craziness, he always listens, always loves me more and never gets tired of me.

Did I mention that I love the fact that I can stay home and be with our handsome little boy. Being home has been a huge blessing and over joyed that my hubby has an amazing career that allows me this luxury. I know some ladies that have to work and/or are the sole provider of their family.

I am thankful for you everyday Matt and more in love with you than the first day we met. Thank you for loving me just for who I am (even when I am having bad days), and most of all thank you for reflecting all of your love onto Kaden!!!

Thankfulness

It is November 1st! Time sure does fly and I am starting my 30 days of thankfulness. Preparing my heart and mind for all of the blessings that I have daily.

I am first and foremost thankful for my Lord and Savior. I accepted Christ at a young age. As I have grown up (especially in the last few years), I have felt overjoyed to be loved by an amazing Heavenly Father. He knows my struggles, my weaknesses, he looks past them and loves me for who I am. I am created in His image to have a relationship with Him. It is so beautiful to know Christ and always sense His presence with me daily. When I am having a great day or a terrible day He is there to lead me, correct me, teach me, and most of all love me.

Do you have that relationship with Christ? He is there! Like a loving parent He has his arms wide open waiting for you to run into his arms. Many times people feel that they can not be loved this way but there is nothing that can separate us from Christ! He is a free gift and it never expires.

Off to the Theatre!

I simply enjoy going to the theatre, even though I have not been as often I would like in the past two years. My sister was a part of Riverside Youth Theatre. I am also proud to say I personally know the owner and founder. Debbie is a fantastic and talented director for all of her productions. They have performed Cats, Joseph and Technicolor Dream Coat, Annie, Grease, Mulan 2, Shrek live, High School Musical, just to name a few. There is some phenomenal talent! You must see them in action. Take your children or enjoy a night out listening and seeing some of the best talent Riverside has to offer. They are award winning individuals! A recipe tradition

Yesterday I attended a mommy group that meets twice a month. The groups meets at a local church and this session we were to bring our favorite dish along with the recipe to share. Plus an meal planning ideas we had were welcome.

During our conversation a woman from the group shared a beautiful tradition. She said that her grandma would jot down what people were doing- sights, sounds, smells (painting a picture for whoever would be making that recipe later on. Isn't that beautiful to pass down or reminisce about Thanksgiving 10 years ago?! I am going to start this. I will compile some of our favorite dishes in a book along with a photo & I cannot forget to jot down some some special memories.

Cost Savings

Have you ever completed a survey for home energy and water efficiency? Southern California Edison, Gas Company, and Water district compiled a packet for us to view. We answered some questions last month and we were eager to find out how we compare with our neighbors, how we can save, and if we are on track on making the best of our resources. The next step is to purchase low flow shower heads or maybe cutting down on the length of showers to save more water. A drip system needs to go into place for our plants, flowers, etc.. This is what we found out pretty impressive:

Our electricity: air conditioner and refrigerator is a hefty cost
How we compare with neighbors- we are much less!

Branching Out

It is not easy to take a leap when you are thankful for consistency. I enjoyed living in Riverside, I was active in the community and the church. When we moved to Murrieta 22 months ago I was not ready to leave "home." Riverside was my home for almost 25 years! I know the mayor, school board, chamber, the movers and the shakers. I enjoyed knowing people! So, when we moved it was difficult. I prayed and many others prayed along with me so that I could find peace. A peace that only God could give. I wanted to be a part of my new city but I felt like a lost child, looking for something familiar.

God spoke to me this past weekend and I acted upon it. He told me that it was time to find a home church here in my city. I wanted to break down and cry. I kept it together! Matt was off at work and I checked out some of the churches close by (via Internet). It is amazing everything that you can learn about on the World Wide Web but you just don't know until you interact with others, especially when you want to learn about a church and their members. I jotted down all of the questions I could think of. Ministries are important to us so that is what we want to get plugged into. I want to join a mommy group and I am signed up to attend this Thursday. What is even more impressive is that we have hired a sitter to be with Kaden for an hour while Matt gets home from work. Family is not very close by so a friends daughter is coming to watch him for an hour, a trial run. Will keep you posted as to how things go. Any great connecting groups?

Great apps

I usually find out about great apps from friends. I enjoy free apps because if I don't care for it then no money is lost. This past week a friend posted a photo strip on Instagram. She stated that it was a free app when you entered in the code (thanks Starbucks)! K and I dashed to Starbucks (I was good and did not purchase a drink- my new diet). I have never entered a code to receive a free app, and the steps were so easy that I am sure a 5 year old can do. Instantly I had "Photobooth!" It's super fun to take pictures. Matt and I have old photo booth pictures when we were dating and I think my parents still have photo booth pictures of my sisters and I growing up.

I like free apps so if you happen to have a one let me know. You can never have too many apps!

Look whats cooking!

My goal for this week was to make dinner each night. Hence.. goal! Since being away for the majority of the month of June and feeling lazy with this warm summer I have not been up to making meals.

Roll it up!

I enjoy cooking (occasionally)! I saw a picture of a delicious pan of lasagna on pinterest. It caught my eye because it was not your average lasagna. It was rolled (individually), shocking! I am proud to say that I have some of my Grandma's craftiness! When she saw something she liked, she was determined to figure out how to make it. Whether it was food, desserts, little party favors, you name it she could master it. Well today I pulled an Abuelita (the word grandma in Spanish)! Since seeing the picture of the rolled lasagna, and I had coupons for ricotta and mozzarella cheese, I took the plunge.
Add sauce as your base, lay lasagna noodle and add your filling and simple roll up
Add more sauce to the top and sprinkle your favorite cheese and bake covered for 35 minutes at 325 degrees

A few tears

Today marked a very special day for Kaden. He joined me in learning God's word. We value the importance of teaching God's word from the very beginning. In the womb Matt and I would read to K and our favorite things to read are passages from the bible.

K did cry a little because he was unsure of his surroundings. He came home and I asked him "Kaden what did you learn at BSF, in your bible study class... with an eager & loud voice he said "GOD!" My heart melts every time I hear this. He enjoys touching the bible and says "BIBLE!" He know that we learn about God from the Bible and it is important to learn.

Tuesday September 11, 2012 marks a special day in my heart. A beginning of teaching my son about our Loving Father, a relationship with Christ. This year BSF is in the book of Genesis. Very applicable to us as we an entering a new beginning!

Healthy style

Have you ever tried spaghetti squash? I have seen some of friends post about it on facebook and I have seen recipes on pinterest. Well I do not think I was fully prepared for this. I am not a professional when it comes to cooking, let alone using knives. I bought the Spaghetti Squash at Fresh and Easy for $1.99 (I thought this was a steal, but I have not priced around). I washed it thoroughly and attempted to cut it. Since I was having a hard time I figured I would use my pumpkin carving tools (I knew if I used them then I would not lose a finger in the process). After cutting it, I scraped out all of the seeds. In the cooking dish I added some water, drizzled some olive oil, sprinkled salt and pepper. I baked it at 375 degrees for 35 minutes. I scraped the squash and it did look like spaghetti which still amazes me. In the crock pot I had artichoke and spinach chicken cooking, everything was complete in two hours. Give it a try, you may like it.

Pumpkins!

Today we headed off to Oak Glen (Yucaipa) for a fun afternoon checking out the pumpkins with two other mommies. Kaden had a great time (even though he had a few meltdowns). It was a chilly 46 degrees up there but totally worth it. I was able to snap a few photos of Kaden with the "punkins" and with the animals. We could not leave without some apple donuts, they are delicious! We need to make this a tradition each year. Pick apples, eat donuts, and enjoy the petting zoo.

Parents night in

Matt and I are blessed to have my parents watch Kaden for two full days & nights. You might wonder if we went away? We didn't! In my mind I am calling it our night in. We went out to dinner and were able to stay up late watching movies and know that we can sleep in! Horray for us.

We did sleep in which has not happened in 18 months! Sleeping till 8 am is a luxury and very rare. We are off celebrating Matt's 36th birthday. God has truly blessed me with an amazing hubby, best friend, and daddy to my son. We had breakfast at home, went to the movies (rare & luxury) saw Taken 2 (pretty good for a sequel), had Japanese food for lunch, then off to a couples massage. It was wonderful to spend quality time with my honey and we did not have to go anywhere. Can't wait for another "parents night in."

Fitness Friday

I am happy to say in one week I have lost 3 pounds!! These are my changes to my lifestyle...
1. Daily exercise whether it is a 30 minutes workout or a 30 minute jog, making it a habit.
2. Drinking water! No soda or fruit juice. I have not had Starbucks in a week which means about $10 saved!
3. Eating more meals at home. I have been making meals at home and controlling portions. No junk food, no desserts and no dairy. Limiting carbs!

The new do

Kaden had an eventful week! He is now a big boy and sleeps in a toddler bed and has had no issues. Amazing!! He also had another haircut. The count is now THREE. I know a few kiddies that at 18 months have never had a haircut, let alone three.

K did very well at a new salon. There is new place called Sports Clips. It is targeted for men so they could go and watch sports while they get a cut. Why isn't there something for women? We spend hours at a salon getting hair dyed, highlights, blow outs, etc.. Anyways this place is great for K, since he loves tv! He sat in the chair all by himself and let the young woman cut his hair. I was very proud! She even changed the channel to cartoons so that Kaden would sit still. The cut was quick and he was ready to explore the salon.

K turned 19 months on October 8th, the time is flying by and we are realizing daily that our baby is growing up to be a very active boy. He is learning about his world and loves to read. He sees me with my bible and says "mama BIBLE!!!" Such a cutie

A new me!

Since I am writing this and posting this then I am accountable! I have to be honest here- I enjoy food but it has affected me. After I had Kaden I lost tons of weight and I thought I could lose more. Well in the last 11 months I have gained weight and it makes me very unhappy. I look at pictures of when K was three months old and I looked good! But now I look at myself in the mirror and I am very sad, disappointed in myself. So, here is my journey...

On September 25th I made a commitment that I will try 110% to workout and lose weight. I can see myself on Christmas Day at least 15 pounds lighter and by March I pray and hope that I am a total of 30 pounds lighter. I will be posting my journey once a week so that I don't bore people daily since improvements should be seen weekly, really seen monthly.

I have worked out, which is not easy with an 18 month old that wants to climb all over me while I do push ups. I enjoy Jillian Michaels 30 day shred plus a good old run with kiddo in the BOB stroller. I have made huge changes in my diet. I know it has only been a few days but I am being strict and it is a lifestyle change. I am not depriving myself in any way but here are my changes:
*No soda! It is not good for you so I thought this would be easy and so far it has been. For the last 13 months it has been my source for a pick me up. Only water!! I can manage this (also means no Starbucks). I will see an increase in my pocketbook.
*No sweets! I enjoy chocolate, especially when I'm moody. I can handle this.
*No junk food! Which boils down to no chips, etc... This is tough because sometimes I crave something salty.
*No fast food! This one is tough because when I am out and about it is convenient to just pick up something. I do crave French fries on occasion but I need to stop.
*Lower my carb intake. Tough but has to be done.
*Don't eat dinner late- my last meal should not be consumed later than 6pm, considering I usually go to bed around 10pm.
*Lower calories- I have been making meals from a weight watchers cookbook and tomorrow I am going to get the Paleo cookbook from Costco.
*Limit dairy consumption. I can totally handle this one. For a period of time I had no dairy because it affected Kaden so I can follow this.

This all may seem tough but all in all it is possible. Eating more fruits, veggies, meat and water. I feel hungry at times and when I feel that I drink water or eat a fruit or veggie. It can only get better from here!! Wish me luck

Branching Out

I am excited to report that I now have a personal stylist!! I am in need of some assistance in my closet. I was able to get some much needed aid yesterday while shopping at my favorite store. I enjoy shopping at Nordstrom and the stylist is someone younger than me and more fashion forward. She picked out some outfits that I would never pair certain items with but could not bring myself into buying them. Next blog I will post pics of me in a few new outfits. I am still stuck on my go to color which is black. I think 75% of my wardrobe is black or has black incorporated. After having a child I simply have not had a passion for fashion like I use to. I love finding bargains and yet still look stylish. I will admit two things that I have yet to get help with:
1. Finding a cute pair of flats that can compliment multiple outfits. (it's a tough one).
2. Finding an adorable infinity scarf that won't break the bank. Must be under $30.

New additions

After our mini getaway all three of us ventured off to San Diego for the day. It was a beautiful day and K did very well with our little trip. We have been in search of nightstands that match our dark cherry wood furniture in our master bedroom. We found tons of great finds at IKEA! Nearly $400 later and a car load we set off to Coronado Island for some delicious Mexican food and set our feet in the sand. We had a blast and look forward to another fun filled day in San Diego.

Happy 5 years

I realized that I did not write about our fun little getaway for our anniversary. Back in May I booked a one night getaway for our anniversary. We have Disneyland annual passes and we enjoy Orange County so two days and one night would be fun and manageable for K. Bright and early we dropped him off at my parents on Thursday. Said our goodbyes and we we were off to the nearest Happiest Place on Earth. We had a blast!! We ate one of my favorites... A giant corn dog, potato chips, and washed it down with an iced cold Coca Cola!

Later that evening we went to Fashion Night Out at South Coast Plaza. It is a nationwide event and what better way to take part than going to one of my favorite malls! I got some lash extensions and checked out iPad cases. I bought nothing, bummed but know that I must lose some weight first. We made our own pizzas and they were so delicious!! Brought back memories of when we were in Naples, Italy!
5 years ago we got married on a Friday and this year our anniversary landed on a Friday. We came home early so we could have dinner at a beautiful winery in Temecula (close to our home). We enjoyed the relaxing and peaceful evening while savoring an amazing prime rib dinner! Very blessed and loved!!

I am one to eat soup at any season but today I was determined to eat my vegetables. With the help of my Weight Watchers cookbook I found some delicious recipes and I will post my version. I can't remember the last time I followed a recipe fully. I wandered through the grocery store with my active and vocal 18 month old boy and my hubby. I bought $43 worth of groceries and I hope that it will make quite a few meals. I was determined to make two meals in one evening. The first was egg quiche (minus pastry) and the Chinese soup.

The soup has chicken broth, thin carrots, baby bok choy, mushrooms, scallions, spinach, and a protein (recipe called for thin slices of pork), I did not cook a protein fast enough so I improvised and added oven roasted turkey. It was tasty and full of vitamins. It was only 7 points!! For those that don't know weight watchers everything is on a point system. My goal is to be 15 pounds thinner by Christmas!
