One dinner two ways!

I am all about meals semi homemade. It saves time and sometimes saves money. I like checking out Fresh & Easy (grocery store) for bargains and I think their motto is semi homemade too. Last week I bought their Pollo Asado in the refrigerated section and southwest salsa. I put the chicken into the freezer and thawed it out this morning. I grilled the chicken and heated up flour tortillas (didn't have corn...oops). Thirty minutes later I had a meal. I had a salad mix, placed the chicken on top, sprinkled a little cheese, salsa, and tortilla strips. My hubby had chicken tacos, he used all the same ingredients minus the salad mix and added bell peppers. Easy summer dinner and it cost less than $10 total, plus we have leftovers!!

Caring for others

I love hearing stories about people caring for others. Today at K's swim lesson there was an older woman with a 14 month old little girl. The little girl was petite with stunning blue eyes. I didn't want to ask if she was a grand baby or if she was the nanny (many people have nannies in our neck of the woods). I complimented on the little ones water "skills." The woman thanked me and said that the little girl was her foster baby. I wanted to cry! Here is an older woman and she is caring for this toddler in such a loving manner. Once again I did not want to ask about the situation but the woman shared and I was happy she did. The conversation re-kindled the fire for us to someday do that for another child. Take a baby into our home and love them unconditionally. Christ's love for all people and I want to express that too. Please join me in prayer as a family we begin to strongly think of the various options available to us. We are called to love and care for the widows and the father less.

Wedding bells will be ringing...

I am happy to announce that I am coordinating and planning weddings. So far this summer I am working on my third wedding! It has been a goal of mine to own a business and I think this is it!! Each wedding is special and unique so the needs of the couple or event itself are different.

My current wedding is requiring 100% of my details. The wedding is two weeks away! I currently don't know any contacts in the Temecula area so I am using previous contacts.

Shake & Bake

It has been an interesting week so far in the Inland Empire. We have had a few earthquakes and scorching heat. I realized that the lowest temp (2am) is still a warm 73 degrees. We have not turned off our air conditioner. When we leave to run errands and such I make sure the thermostat is set at 78 degrees and once we are back I switch it to 74 degrees. We try to conserve energy so we do not watch very much television, limit washer and dryer, run the dishwasher early in the morning and let in as much natural light for brightness but not allow heat. I will take dry heat any day! I could not handle 96 degree weather with 90% humidity! I was roasting and vowed never to go to Florida in the summer. We are trying to keep cool so we go walking in the mall, see a movie (yes with Kaden, he does very well), have lunch or dinner out as a treat.

Summer Days

We enjoy summer days filled with sunshine and warmth. Kaden has been enjoying playing outside in the evenings or early mornings before the scorching heat. He loves to play in the jumper. A few days ago he was able to play with someone besides mom & dad. Sophia was over for a few days and enjoyed playing with K! They are so cute together. We took them to Disneyland and had a blast. Excited to see them grow up together as friends!
